Feta Cheese Spinach Dumplings


 preparation :  

  1. Feta cheese 100-150g
  2. a small bag of spinach
  3. chopped green onion, salt and pepper.
  4. Dumpling skin: a cup of flour, a pinch of salt, 3-4 table spoons of water



#Make dough for dumpling skin

  1. Add a pinch of salt to the prepared flour and sift through a sieve.
  2. Add about 3 tablespoons of water and knead it, then wrap it in plastic bag and put it in the refrigerator to ripen.
tip Let the dough mature for at least 30 minutes before use. Usually, it needs to be aged for more than 1 hour to make more elastic dumpling skin.


How to cook 

  1. Blanch the spinach in boiling water for 10 seconds with a pinch of salt, then rinse in cold water and squeeze out the water and cut in chop
  2. Add 1 tsp chopped green onion, salt and pepper to blanched spinach and mix well.
  3. Put the feta cheese in a plastic bag and cut it into pieces by hitting it with a bat.
  4. Mix the chopped and seasoned spinach and feta cheese evenly.
  5. Spread a little flour on a chopping board, place the aged dough on it, roll it out thinly with a rolling pin, and use a cup to print round dumpling skins about 7cm in diameter.
  6. Put the prepared spinach feta stuff in the round dumpling skin, fold it in half to make a semicircle, apply water to the edge of the skin, and press it firmly with your fingers to adhere it. 👆 the adhesive part of the semicircle dumpling skin can be wrinkled to form a wave shape, or the ends of the semicircle can be gathered and pressed together to form a round bag.
  7. Well-made dumplings can be steamed on a steamer or cooked in boiling water.
  8. When the dumplings are fully cooked, put them on a plate and dip them in the soy sauce.

It is okay to cut the dumpling skin with a knife and make it into a 7cm square.

 

Soy sauce: Soy sauce 1, Water 1: Vinegar 1/2
